5 Egg Whites
1 cup Cane Sugar
1 Tbsp. Cornstarch, sifted
1 tsp. White Vinegar
½ cup Almonds, sliced, optional

Cream Cheese:
8 oz. Cream Cheese
1 Egg
¼-½ cup Cane Sugar
1 tsp. Vanilla

Cream:
1 cup Whipping Cream
¼ cup Cane Sugar
1 tsp. Vanilla

Topping:
Fruits of your choice

Directions:
Beat egg whites on high speed until soft peaks form. Slowly add sugar, beating as you go. After sugar is added beat for another 3 minutes or until thick and gloss. Add cornstarch and vinegar and beat on low for 5 to 7 seconds, fold in almonds. Place parchment paper into baking sheet and sprinkle with a little cornstarch, then pour egg whites onto parchment paper and shape into a 9 inch nest. Bake at 325ºF for roughly 45 minutes or until golden brown. Set aside to cool. Handle gently to prevent cracks or braking.

Cream Cheese:
Beat all ingredients together and gently spoon into cooled Pavlova nest.

Cream:
Beat whipping cream, sugar and vanilla until desired thickness then spoon over top of cream cheese.
Top off the Pavlova with your choice of fruits.
