For the Pancakes:
4 eggs
2 cups whole milk
6 Tbsp unsalted butter, melted
1/2 tsp almond extract
3 cups all-purpose flour
7-8 oz almond paste, crumbled
4 tsp baking powder
1/2 tsp salt
1 1/2 cups dried cherries

For the Dark Cherry Cream Syrup:
15.5 oz can pitted dark sweet cherries in syrup
1/2 cup whipping cream
3 Tbsp sugar

For the Pancakes:
Whisk together the eggs and milk until blended.
Whisk in the butter and almond extract until blended.
Pulse the flour, almond paste, baking powder, and salt in food processor until it becomes texture of coarse meal.
Stir the flour mixture into the egg mixture just until combined, then stir in the cherries.
Heat a skillet over medium heat until hot, then oil the skillet.
Ladle the batter by scant 1/4-cupfuls into the skillet, spreading it to 4-inch rounds.
Cook for 2 1/2 minutes, or until bubbles break the surface.
Flip and cook for 2 minutes, or until golden brown.

For the Syrup:
Strain the syrup from the cherries into a medium saucepan and boil until reduced by half.
Stir in the cherries, cream, and sugar, and boil for 3 - 5 minutes, or until slightly thickened.
Serve at room temperature.
