Meatloaf
3 lbs fatty ground beef (or any meat blend of your choice)
1 cup ricotta cheese
1 Tbsp coarse salt (more or less to taste)
2 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp Italian seasoning

Gravy
1 cup beef broth
1 cup heavy cream
1/2 tsp black pepper
Salt to taste

To make meatloaf
1. Preheat oven to 400F
2. Add meat, ricotta, and seasonings into a food processor
(alternatively you can mix by hand or in a stand mixer, but you will
not get as smooth of a texture).
3. Pulse until the mixture is homogenous and all ricotta is combined
in with the meat.
4. Place mixture on a baking sheet and shape into a loaf without
compressing meat more than necessary. For easier cleanup use a
sheet of parchment paper on baking sheet.
5. Bake in oven at 400F until reaching an internal temperature of
145F (approximately 60 minutes).
6. Remove from oven, rest for 5-10 minutes, and slice and serve.

To make gravy
1. Add beef broth, cream, and pepper to a skillet over medium to
medium high heat.
2. Cook while whisking constantly and evaporate liquid until a thick
gravy forms. Bubbles will grow in size and the whisk will leave a
trace behind in the pan while whisking.
3. Taste for salt and season as you wish.
4. Remove from heat and add over slices of meatloaf. If waiting for
meatloaf to bake set aside and return later to a low to medium heat
while whisking to warm before serving over slices of meatloaf.
