1 pound Italian sausage
1 large onion, chopped
3 cloves garlic, minced
kosher salt
pepper
6 cups low sodium chicken broth
4 large potatoes, diced
1 bunch curly kale or spinach, chopped
3/4 cup heavy cram
4 slices bacon, cooked and chopped
1/4 cup parmesan cheese, chopped

Directions:
Directions:
Cook sausage until brown in a large pot. Take out sausage and set aside. Cook onions until soft in sausage drippings. Add garlic and cook 1 minute. Season with salt and pepper. Add chicken broth and potatoes and cook until potatoes are tender approx 25 minutes. Stir in kale or spinach and cook until tender. Add heavy cream, sausage and bacon and simmer 5 minutes. Serve topped with parmesan cheese
