Kendra's Biscuits and Gravy Recipe

1 lb sausage
1/4 cup flour
2 cups milk
salt and pepper
hot biscuits

Directions:
Directions:
Cook the sausage, breaking it up as you go, in a large skillet over medium-ish heat until it's brown.
Remove as much of it as you can to a bowl or plate and set aside.
Put the flour in a 1-cup glass measuring cup and stir in a little milk at a time, stirring it vigorously with a fork, until a smooth and creamy roux is achieved.
Add to the skillet and stir into the hot sausage grease, stirring vigorously with the fork to get it as smooth as possible and smashing down lumps.
Slowly add the milk, a little at a time, blending it in with the fork after each addition.
When it's all in, keep stirring, scraping the bottom and smashing any lumps you come across, and let it cook just a bit.
It thickens as it cooks/sets, but if it's really too thin, you can always make a little more roux in your measuring cup and add it in or add a bit more milk if it's too thick.
Stir the sausage in, salt and pepper to taste, and serve over hot biscuits.
