For the Manicotti:
1 1/2 cups all purpose flour
1 cup milk
3 eggs
1/2 tsp salt

For the Filling:
1 1/2 lbs ricotta
1/4 - 1/2 cups grated Romano cheese
1 egg
1 tsp parsley

1 - 1 1/2 jars of spaghetti sauce
shredded Italian blend cheese
additional grated Romano

Directions:
Directions:
Spread 1/2 jar spaghetti sauce into the bottom of a 13x9-in pan.
Stir the filling ingredients together in a small bowl until well combined.
Whisk together the flour, milk, eggs, and salt until smooth.
Heat a small greased skillet over medium heat, then spread about 2 Tbsp batter into a 5-inch circle in the skillet.
Remove to a plate when cooked, but not browned, and start the next crepe in the skillet.
Place a spoonful of the ricotta filling in the already finished crepe, then roll, and place in the baking pan.
Continue the process until you have used up all of the batter and filling.
Cover the manicotti with additional spaghetti sauce, then sprinkle with the shredded cheese and additional grated Romano.
Cover and bake at 350º for 20 minutes, then uncover and bake 20 minutes more.
