12 oz elbow macaroni
3 Tbsp butter
1/4 cup diced onion
3 Tbsp flour
2 cups warm milk
1/2 tsp pepper
1 Tbsp mustard
1 1/2 cups shredded Fontina cheese
1 1/2 cups shredded Provolone cheese
1/2 cup shredded sharp cheddar cheese
4 slices bacon, crumbled
1 tsp parsley

Directions:
Directions:
Cook the macaroni, drain, and set aside.
Combine the shredded cheeses.
Sauté the onion in the butter in a large saucepan until transparent.
Whisk the flour into the butter and stir until there are no lumps of flour.
Slowly the milk in with a fork or whisk, scraping the bottom, until it is smooth.
Bring to a simmer, stirring constantly, then reduce heat to low.
Mix in the pepper and mustard, then add 3 cups of cheese to the saucepan and stir until melted.
Stir in the bacon and spread into a greased 13x9-inch baking pan.
Sprinkle with the remaining cheese and bake at 375º for 30 minutes, until golden.
Sprinkle with the parsley to serve.
