2 ¼ c flour
2 c sugar
½ c cocoa (I like the Rodelle baking cocoa)
2 ½ tsp baking soda
1 tsp salt
1 c oil
1 c buttermilk or sour milk
2 eggs
1 c hot water
1 tsp vanilla

Directions:
Directions:
Mix oil, buttermilk and eggs. Add hot water to cocoa, mix well and add to buttermilk mix. Combine dry ingredients, stir together and add to the wet mixture. Beat well making sure there are no lumps. Add the vanilla.
Bake in 350 oven for 35 to 40 min in a 9x13 pan. Also this is my go to recipe when I want cupcakes. Make liners about ⅔'s full and bake for 15 min at 350. Ice with your favorite icing or serve with butter/caramel sauce and ice cream or cool whip.
One recipe makes about 35 to 40 cupcakes.

Stirring the flour and sugar together helps that there are no lumps.
