1 cup flour
1-2 T. Powdered sugar
1/4 tsp. salt
1 cup whole milk
2 eggs, slightly beaten
1 tsp. vanilla
1 tsp. almond or lemon extract- opt.
OIL or melted lard or shortening for frying

Directions:
Directions:
Mix flour, powdered sugar and salt in mixing bowl. Mix wet ingredients and mix into the dry ingredients until smooth. ( Old recipes say to let batter sit for at least 1 hour to overnight to eliminate air bubbles- I usually let it sit 1 hour.)
Heat veg. oil to 365-375º in deep skillet ,electric fry pan, or deep fryer.
Place rosette iron in hot fat for at least 1 minute. Shake oil off iron and immediately dip hot iron into batter about 3/4 of the way up the side of the iron. Fry in hot oil until golden, about 1/2 minute. Lift out slightly to drain and push rosette off iron withy a fork onto paper towel lined rack, Continue making rosettes, making sure oil and iron are hot.
( if cookie falls off iron in fat it usually means it needs more flour. If batter i too thick- add milk) ( It helps to have a couple irons to make frying go faster)
If desired - rosettes can be placed on a cookie sheet with paper towels between layers. Preheat oven to 300º - add rosettes and turn off oven. This will remove excess grease.

Dip each rosette in powdered sugar
