3 whole chicken breasts, boned and trimmed
6 slices cooked sliced ham
6 slices swiss cheese
6 tablespoons flour
1/2 tsp salt
1/4 tsp pepper
4 eggs
2 tablespoons water
2 tablespoons unsalted butter
2 tablespoons lemon juice
1 1/2 cups fresh bread crumbs
peanut oil

Cut each whole breast into two pieces. Slice a pocket horizontally lengthwise about 3/4 the way through each piece. Flatten each breast. Wrap 1 piece of cheese with the ham and put inside each breast. Wrap breast around opening. Refrigerate 30 minutes. Combine flour, salt and pepper. Beat egg and water in a bowl. Coat each breast with flour, dip in egg and coat with crumbs. Cook in a single layer in 1/4" of hot oil for 10 minutes until golden, turning once. Bake in oven at 325º for 10 minutes. Melt butter and stir in lemon juice. Spoon over breasts before serving.
