2 oz bacon, chopped
1 cup sliced mushrooms
1/4 cup chopped onion
1/4 cup chopped green bell pepper
1/2 cup Bisquick
1 cup milk
6 eggs
1 tsp cayenne pepper hot sauce
2 cups roughly chopped spinach

For the Topping:
1/4 cup mayonnaise
1 Tbsp cayenne pepper hot sauce
1 Tbsp lemon juice
Directions:
Directions:
Cook the bacon in a skillet over medium-low heat until the fat has rendered.
Add the mushrooms, onions, and pepper.
Increase heat to medium and cook until the mushrooms are tender.
Beat together the Bisquick, milk, and eggs.
Add the hot sauce, spinach, and the bacon mixture.
Pour into a greased 9x9-inch baking dish and bake for 30 - 40 minutes, until the eggs are set.
Combine the topping ingredients and drizzle over the casserole to serve.
