3 lbs skinless turkey thighs
7 oz jar roasted red bell peppers, drained and coarsely chopped
2 medium onions, halved and sliced
1 tsp salt
2 cups chicken broth
2 tsp Italian seasoning
8 (8-inch) flour tortillas
8 slices provolone cheese, halved

Directions:
Directions:
Place the turkey, peppers, and onions into a crockpot, sprinkle with salt, and pour the broth over.
Cover and cook on low for 7 - 8 hours.
Shred the turkey, then return to the crockpot with the Italian seasoning.
Mix together, then use a slotted spoon to fill each tortilla with about 2/3 cup of the turkey mixture.
Top with the cheese, roll up, halve, and serve.
