Mom/Grandma Eileen's recipe

Batter:
1/2 c. + 2 tbsp. brown sugar
1 egg
1 tsp. vanilla
1/2 c. buttermilk
4 tbsp. melted butter
1 1/4 c. flour
1/2 tsp. baking soda
1/2 tbsp. baking powder
1 c. cut up rhubarb
1/2 c. chopped nuts

Topping:
1/4 c. granulated sugar
1 tbsp. melted butter
1/2 tsp. cinnamon

Directions:
Directions:
Batter: Mix together brown sugar, egg, vanilla, buttermilk, and butter. Add the flour, baking soda and baking powder. Add rhubarb and nuts. Stir until coated; don't overmix. Pour batter into muffin pan.

Topping: Mix together the granulated sugar, melted butter and cinnamon. Sprinkle on the top of the batter. Bake at 400º for 15-20 minutes.
