21/2 C self-rising flour
1/4 tsp fine sea salt
1/4 tsp sugar
8 Tbs butter, cubed
2 Tbs Crisco, cold and cubed
1 1/2-2 C buttermilk
4 Tbs butter, melted

Directions:
Directions:
Preheat oven to 500º. Line baking sheet with parchment paper.

In large bowl, whisk together flour, salt, and sugar. Using pastry blender, cut in cold butter and Crisco until both pea sized and sandy patches exist. Gradually add 1 1/2 C buttermilk and gently mix with hands until dough starts to form mass. If dough is dry, add more buttermilk. Dough should be sticky. Turn out onto floured surface. Roll dough out to 3/4 inch thick rectangle. Fold top third of dough over center and fold bottom third of dough over center. Roll out to 1/2 inch thick. Rotate a quarter turn and repeat process two more times.

Dip 3-inch biscuit cutter into flour and punch out biscuits being sure to not twist cutter. Arrange biscuits on baking sheet close together. Brush tops with half of melted butter.

Place biscuits in oven and immediately reduce heat to 450º. Bake 18-20 minutes until golden brown. Brush with remaining melted butter.
