2-Tbls- Oil
1-Onion – preferably sweet
2-Celery stalks
2-lg Carrots-diced
4-Garlic cloves
¼ tsp thyme
¼ tsp ground cumin
¼ tsp ground white pepper
¼ tsp red pepper flakes
2- bay Leaves
6 cups Chicken broth (I prefer Knorr)
5 cans White beans – Great Northern Beans, Cannellini Beans, or Navy Bean (can be substituted)
Ham Steak – and/or ham bone

Directions:
Directions:
1) Add oil to heavy bottom pot along with vegetables and sauté until tender.
2)Rinse and add beans to pot and cover with chicken broth.
3) Add spices. The ¼ tsp of each is a starting point, adjust flavorings to your liking.
4) Add ham to the soup and bring to a boil and simmer for 2 hours keeping watch that the broth doesn't boil away.
5) Remove Bay leaves and serve.
