Crust:
2 c. flour
1/4 c. sugar
1 c. butter
1st layer:
2 c. sugar
7 T. flour
1 c. heavy whipping cream
3 eggs, beaten
5 c. finely chopped rhubarb
Topping:
2 pkg. cream cheese
1/2 c. sugar
1/2 tsp. vanilla
1 c. heavy whipping cream, whipped

Directions:
Directions:
For crust, combine flour and sugar, cut in butter until coarse crumbles. Press into greased 9x13 pan. Bake at 350º for 10 min. For first layer, combine sugar and flour. Whisk in cream and eggs. Stir in rhubarb. Pour over crust. Bake at 350º for 40-45 min. or until set. Cool. Beat cream cheese, sugar and vanilla until smooth, fold in whipped cream. Spread over 1st layer. Cover and chill. Store in fridge.
