3 lbs. lean ground beef (at least 80% lean)
2 cups finely diced carrots
1 cup finely diced green bell pepper (optional)
14.5 oz. canned diced tomatoes
12 cups of beef broth
2 tbsp tomato paste
4 cups of assorted dried noodles (fine, med & thick)

In a large heavy pot with a lid, brown the ground bee over medium-high heat. Drain and return to stove

Stir the carrots, green pepper, and diced tomatoes with the juice into the cooked ground beef. Pour in the broth, and then stir in the tomato paste. Bring to a boil.

Once boiling, stir in the noodles. Adjust heaat to remain at a simmer. Cover and cook for 15 minutes or until the noodles are tender, stirring occasionally and adjusting the heat if needed.

I'll start by saying this was my ultimate comfort food as a child....Campbell's Noodles and Ground Beef cans lived in the pantry in Middle Village for those afternoons when you needed something warm.....

Campbell's discontinued this soup in the 90's, but by that time, I was married and too busy to realize that you couldn't buy it anymore in the store. By the time I figured it out, I came to terms with its demise and moved on, until I got sick and wanted that little bit of comfort. I looked online (many years later) and found this recipe and messed with it a bit......IT TASTES EXACTLY THE SAME!!!

I will say this, it doesn't freeze well because of the noodles, so if you are making it for yourself or even trying it, halve or even quarter the recipe. You can store it in the fridge for a couple days, enough time to eat all of it.
