1½ cups sugar
1½ cups water
¼ cup cornstarch
¼ cup lemon juice
½ teas salt
1 TBS butter
1 pkg (3-ounce) peach Jello
7-8 peaches, sliced.
2 graham cracker pie shells

Directions:
Directions:
1) Cook together sugar, water and cornstarch over medium/low heat until thick, add lemon juice, salt, butter and Jello.
2) Let cool.
3) Add sliced peaches and pour mixture into pie shells.

Chill until set, top with whipped cream before serving.

A favorite pie of my mom's, she enjoyed making this recipe for peach pie more than her traditional peach pie recipe, maybe because she didn't have to make a crust.

During a stay with me prior to her 100th birthday, I asked her if she remembered making peach pie, and if she would like to help me make her special recipe; so, I got the peaches out, along with the cutting board, a peeler, a knife and a bowl. It was great seeing her peeling and slicing peaches, you could tell how good it made her feel to be in the kitchen doing something that she was familiar doing and that she was helping me in the kitchen.
