1 1/2 teaspoons of oil
1 large bell pepper, diced
3 green onions, chopped
16 ounces of country ham, diced
8 large eggs
1/2 cup of milk
1/2 teaspoon of salt
1/4 teaspoon of pepper
8 ounces (1 cup) of shredded cheddar cheese, divided
12 hashbrown patties
Directions:
Directions:
1)Preheat your oven to 350º
2)Heat oil in a skillet over medium heat.
3)Add diced bell peppers and chopped green onions to the skillet and sauté for about 5 minutes, or until tender.(set aside)
4)Add diced ham to the skillet and cook until the ham is lightly brown, approximately 5 minutes. Remove the skillet from the heat and set aside to cool slightly.
6)In a large mixing bowl, whisk together eggs, milk, salt, and pepper.
7)Add cooked ham, pepper & onion mixture to the bowl with the eggs. Stir to combine.
8)Arrange Hashbrowns in 9x13 greased casserole dish (squish the hashbrown patties down a little if you need to to cover the bottom of the pan)
9)Pour the egg mixture over the hasbrown patties. Sprinkle shredded cheese evenly over the top.
Bake the casserole for approximately 45 minutes, or until the eggs are set and the cheese is melted and bubbly.
