1 Salmon filet, rinsed with several shakes of Tastefully Simple seasonings & garlic powder.

12 potstickers (Trader Joe's pork or Dollar Tree's chicken & vegetable) – Heat 1 Tbsp. sesame or avocado oil over medium heat in cast iron pan – cook 2 min. on each side to brown.

Add 1 Tbsp. water to pan and cover, cooking 3 min. – drizzle with soy sauce, cooking a minute longer then place in warm oven.

Using same cast iron pan, add 1 Tbsp. sesame oil over medium heat, place salmon skin side down – cover and cook 5 min. Then over top of fish, 1 Tbsp. orange juice, few shakes of Amazon Mango hot sauce and 1 Tbsp. soy sauce. Cover and turn burner off.

Place several pieces of lettuce greens on plate, top with skinless salmon portion; add 6 potstickers and green vegetable of your choice (steamed broccoli or asparagus work well).

Spicy Mango Sauce: (Good on fish, seafood, chicken; works as a sweet/spicy dip too)
¾ c. finely chopped mango
¼ c. seasoned rice vinegar
Juice from one lime
½ of a small Thai chili pepper, minced
1 clove garlic, crushed
1 tsp. hot chili paste
1 Tbsp. chopped fresh cilantro or parsley
