- 1/2 cup bacon fat, cooled but still liquid
- 2 large egg yolks, at room temperature
- 1 teaspoons Dijon mustard
- 1 tablespoon apple cider vinegar or white wine vinegar
- 1/2 teaspoon salt, or to taste

1. Separate the egg yolks from the whites. You can reserve the whites for another use
or discard them.

2. In a food processor or blender, combine the egg yolks, Dijon mustard, apple cider
vinegar, salt. Pulse a few times to mix.

3. With the food processor or blender running, slowly drizzle in the bacon fat in a
steady stream. It's important to add the bacon fat slowly to allow it to emulsify with
the other ingredients and create a creamy texture.

4. Continue blending until all of the bacon fat is incorporated and the mayo is thick and
creamy.

5. Taste the mayo and adjust the seasoning if needed, adding more salt, pepper, or
vinegar to suit your taste.

6. Transfer the bacon fat mayo to a clean jar or airtight container and store it in the
refrigerator. It will thicken slightly as it chills.

7. Use your homemade bacon fat mayo as a delicious spread for sandwiches, burgers,
or as a dip for fries or veggies. Enjoy the rich, smoky flavor that the bacon fat adds
to this homemade condiment! Use within a few days to keep mayo from spoiling.
