  • 3-5oz Lobster tails

  • 4 eggs

  • 1 ½ cup heavy cream

  • 2 cups mixture gouda & parmesan cheese (shredded)

  • ½ red onion

  • 1 clove garlic

  • Handful arugula

  • Cayenne pepper, paprika, adobo (Badia) season - 1 teaspoon each

  • ½ tsp nutmeg

  • Sautee onions & garlic in olive oil (1 tbsp) or enough to cover the bottom of an 8 in. cast iron skillet

  • Add lobster tails until tender

  • Layer half the cheese

  • Mix eggs, seasonings, heavy cream, and pour over the above items.

  • Leave on top of stove until it starts to set; finish off in 350-degree oven for 35 minutes or until set
