5 oz evaporated milk
2 tsp vinegar
1 tsp Louisiana hot sauce
1 lb shrimp, peeled and deveined
Kosher salt and pepper or Cajun seasoning
1 C flour
1 Tbs baking powder
Cocktail sauce
Peanut oil

Directions:
Directions:
In large heavy saucepan, add 2 inches of oil and heat to 380º.

In large bowl, whisk together eggs, evaporated milk, vinegar, and hot sauce. Add shrimp and toss to coat. Refrigerate for 1 hour. Using slotted spoon, transfer shrimp to plate and discard marinade. Season shrimp with salt and pepper.

In shallow bowl, whisk together flour and baking powder. One at a time, dredge shrimp in flour mixture, shaking off excess.

Fry in batches turning once or twice or until golden brown, about 1-2 minutes. Transfer to plate lined with paper towels. Season with salt and pepper. Serve immediately.
