2 egg whites, room temperature
1 cup sugar (I use less)
2 cups fresh strawberries (I cut them in half)
1 TBS Lemon Juice

1) Beat all ingredients together on low first, and then increase the speed to high for 10-15 minutes.

2) Pour into a springform pan and freeze at least 6-hours.

Judy and her husband Geoff lived in New Jersey and had a summer home with lake access on Lake Wallenpaupack in Hawley, PA. where I had my Tea House, it was at the Tea House that we met, coming to the tea house whenever they would come up to their summer home.

When Judy and Geoff found out that John was still living in NJ while I was trying to get the business going in Hawley, she and Geoff invited me to go out on their pontoon boat, after closing for the day at the Tea House, we would tour around Lake Wallenpaupack while enjoying some wine and snacks, they did this so I wouldn't be alone and that I could relax a little away from the business.

When they finally met John; Geoff and John enjoyed talking about fishing and sports, and as time went by, they would go fishing together.
Judy and I both enjoy cooking, and especially cooking for others, and trying out recipes which made for a great relationship. Through the years we would take turns inviting each other to dinner cooking some kind of gourmet meal; but now that we don't live near each other since John and I have retired, we meet in between our houses and go out to dinners, but it's just not the same, I miss having someone who enjoys food and cooking as much as I do.

We have a friendship that has grown since we met some 20+ years ago.
