4 (1 oz) squares semi sweet chocolate, chopped

1/2 c room temperature butter

3/4 c sugar

1/2 c cocoa powder

3 eggs, beaten

1 tsp vanilla extract

Preheat oven to 300º

Grease an 8 inch round cake pan with butter (not the butter for the recipe) and dust with cocoa powder to prevent sticking.

Using a double boiler or a sauce pan filled half way with water and a larger glass bowl fitted over top. Make sure the water can't get in the chocolate or it will seize up and you'll have to start over with new chocolate and that always sucks, melt chocolate and butter. Remove from heat and stir in sugar, cocoa powder, eggs, and vanilla. (Make sure it's not too hot or it'll scramble the eggs). Pour into prepared pan.

Bake for 30 minutes. Let cool in pan for 10 minutes, then turn out on wire rack and cool completely.

3/4 c heavy whipping cream

1 c semi sweet chocolate chips

Microwave whipping cream 1-2 minutes, until hot. Don't let it boil.

Whisk in chocolate chips until smooth. Put in freezer for 10-12 minutes to firm it up a little. Stir in 5 minute intervals.

Pour gnash over chocolate cake and put in fridge.

Eat and enjoy a gluten-free cake that's actually tasty and has good texture!!

Auntie Denise has celiac and I wanted to make her a birthday cake one year. I found this recipe, and it absolutely DOES NOT disappoint, even being gluten free.
