Ingredients: 2 cups whole milk 3 bags Earl Grey tea 2½ cups all-purpose flour 2 teas baking powder 2 teas Kosher salt 2 cups sugar ¾ cup canola oil 2 eggs

Directions:Preheat oven to 350 degrees and line 24 cupcake wells with baking cups. Warm milk to a simmer in a saucepan and steep 3 bags of Earl Grey tea for 6-8 minutes, set aside to cool, squeeze tea bags. Combine the flour, baking powder and salt in a bowl. Mix well. Combine the sugar, oil, eggs and cooled Earl Grey in a stand mixer or bowl. Mix well until combined. Pour the dry ingredients into the wet ingredients. Mix until combined, scraping the sides of the bow. Spoon the batter into the prepared cupcake pans, filling the baking cups about halfway. Bake 20-22 minutes or until toothpick inserted comes out dry. Put on a wire rack to cool. Prepare Honey frosting and frost. |

Ingredients: 1 pound butter, softened 5 cups confectioners' sugar (10X) 2 TBS honey 2 TBS Lemon juice

Directions: |
Directions:Beat butter and 1 cup confectioners' sugar. Add 3 more cups, one at a time, mixing well between each cup. Stir in hone and lemon Juice, and add final cup of confectioners' sugar until sthe right consistency. Pipe the frosting onto the cupcakes. NOTE: Drizzle honey over the iced cupcakes if desired. |

Notes: Always looking for recipes including tea as an ingredient, these cupcakes were a favorite. I would bake them as mini-cupcakes and include them when serving Afternoon Tea.
