1 cup Extra Fancy Rice (Goya)
3 cups water
1 lemon peel
2 cinnamon sticks
1 can evaporated milk diluted in 2 cups water
1 can condensed milk diluted in 2 cups water
1 cup whole milk
2 teas vanilla
1 small container half & half
ground cinnamon.

Directions:
Directions:
1) Make sure the milks are thoroughly diluted or they will sink and stick to the bottom of the pot.
2) Wash rice and place in a large pot with water, lemon peel, and cinnamon stick.
3) Cook until the rice softens and most of the water evaporates (stirring frequently to avoid sticking).
4) Add milks, salt and vanilla, continue to cook over low flame for approximately one hour or until mixture thickens and becomes creamy.
5) Place in container and sprinkle with ground cinnamon and let stand for several minutes before serving.
***Can be served warm or cold.***

Ken was a varsity wrestler at Mahwah High School for four years, and before each match he would have me make him rice pudding, he loved his moms Rice Pudding.
But after he took a part-time job at Bamberger's at the Garden State Mall in his senior year, where he met his now wife Theresa, and after they started dating, Theresa found out that Ken loved rice pudding and started making him her Cuban Rice pudding. Suddenly moms was second best. This Cuban Rice Pudding recipe is the reason I have a "Bonus Daughter" and three amazing grandchildren, Cristofer, Marisol and Julian.
