2 cans salmon
1 small finely diced onion
2 eggs
6 T. mayonnaise
6 T. flour
6 T. cforn meal
oil for frying
ice cream scoop for dipping patties so they are all the same size

Directions:
Directions:
Open salmon and add to a large bowl. Remove the pin bones. Some people leave these as they are high in calcium. Add the onion, eggs and mayonnaise and stir well.
Once mixed add the flour and cornmeal and combine well. Heat oil in a cast iron or heavy bottom skillet. Fry until golden brown on each side. Lightly sprinkle with sale after removing from the pan. Seve with your favorite dipping sauce.
