2 c. flour
1 tsp. baking soda
3/4 tsp. salt
3/4 c. butter softened
1/4 c. coconut oil
3/4 c. white sugar
3/4 c. brown sugar
1 tsp. vanilla
2 large eggs
2 c. semi sweet chocolate chips
1 c. chopped pecans
1/3 c. coconut
2/3 c. quick oatmeal

Preheat oven to 325ºF.

Combine flour, baking soda and salt in a small bowl. Beat butter, coconut oil, sugars and vanilla in a large mixing bowl until creamy. Add eggs one at a time, beating well after each. Gradually beat in flour mixture. Stir in chocolate chips, oatmeal, nuts and coconut. Drop by large cookie scoop onto parchment-lined baking sheets. Flatten slightly with a fork.

Bake for 8 to 10 minutes until lightly browned on the bottom. Cool on pan for 2 minutes then remove to wire rack to cool completely.
