1 cup unsalted butter, softened
1 cup granulated sugar
1 cup packed brown sugar
2 large eggs
1 cup creamy peanut butter
1 tsp vanilla extract
2 cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
2 cups old-fashioned oats
1½ cups semisweet chocolate chips
1 cup chopped pecans
½ cup shredded coconut

1. Preheat the oven to 350°. Line baking sheets with parchment paper.
2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
3. Beat in the eggs one at a time, then stir in the peanut butter and vanilla extract.
4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
5. Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
6. Fold in the oats, chocolate chips, pecans, and shredded coconut.
7. Drop rounded tablespoons of dough onto the prepared baking sheets.
8. Bake for 10-12 min, or until the edges are golden brown.
9. Allow the cookies to cool on the baking sheets for 5 min before transferring to wire racks to cool completely.
