Blueberry French Toast Recipe

12 slices white bread, crust removed & cut into 1" cubes
2 (8 oz) packages cream cheese, cut in 1" cubes
1 cup fresh or frozen blueberries
12 eggs
2 cups milk
1/2 cup syrup or honey

Sauce:
1 cup sugar
1 cup water
1 cup fresh or frozen blueberries
2 Tablespoons cornstarch
1 Tablespoon butter

Directions:
Directions:
Place 1/2 of bread cubes in greased 9 x 13 pan. Place cream cheese over cubes, then blueberries. Put remaining bread cubes on top. Beat eggs, milk, and honey, and pour over bread. Bake at 350º for 30 minutes covered, then 30 minutes uncovered until browned and set. Cover and chill 8 hours or overnight. Bring to room temperature before adding sauce.

For sauce:
In saucepan, combine sugar and cornstarch, add water. Bring to boil over medium heat. Boil for 3 minutes, stirring constantly. Stir in blueberries and reduce heat. Simmer for 8 - 10 minutes until berries have burst. Stir in butter and serve over the French toast.
