2 chicken breasts, cooked, deboned and sliced fairly thin
1 can water chestnuts
1 can bamboo shoots
1 c. broccoli, cut into bite-sized pieces
1 c. carrots, cut at a diagonal in long pieces
½ c. celery, cut at a diagonal in larger pieces
1 Tbsp. vegetable oil
2 to 3 garlic cloves, minced

Broth:
1 can chicken broth
1½ Tbsp. soy sauce
1½ tsp. corn starch

Marinade for chicken:
1½ tsp. corn starch
¼ c. cooking sherry
1½ Tbsp. soy sauce

Directions:

Mix together the 3 ingredients for the marinade and add it to the chicken slices for 30 to 60 minutes.

In large skillet or wok, stir fry vegetables with garlic and oil. Remove veggies from pan; set aside. Combine the broth ingredients and set aside. Add the marinated chicken to the hot drippings in pan. Stir fry the chicken until just barely done (do not overcook the chicken or it will be tough). Add vegetables and the broth mixture to the pan with the chicken. Stir until sauce has thickened. Serve with rice.
