7 T canola oil, divided
*16 shrimp, peeled and deveined, whole or chopped
4 extra-large eggs, beaten
8 c cooked basmati rice (chilled)
3 scallions, chopped
1 c fresh or frozen and defrosted peas
4 T soy sauce
1 tsp brown sugar
1/8 kosher salt

* substitute shredded chicken or pork
1-1/2 cups chicken or pork

Directions:
Directions:
In a large skillet, beat 2 T of oil until hot and add shrimp.
* If using chicken, pork or beef, heat in microwave.
Cook shrimp for 3 minutes, then transfer to plate.

** In same skillet, heat remaining 5 T oil until hot. Add eggs and cook
until slightly scrambled. Add rice, shrimp, scallions, peas, soy sauce
brown sugar and salt. OR

**NOTE I would add butter in skillet, melt and scramble eggs.
Add to the eggs, rice, shrimp (OR meat), scallions, peas, soy sauce,
brown sugar and salt. Cook for about 3 minutes and serve immediately.
