4 lb. Ground Beef
2 tsp. Salt
1 tsp. Ginger
⅔ C. Cracker crumbs
3 Eggs
3 tsp. Water
1 C. Flour
Salad Oil
3 C. Pineapple juice
⅔ C. Apricot jam
¾ C. Vinegar
4 Tbsp. Soy sauce
4 #2½ cans chunk pineapple, drained

Mix ground beef, salt, ginger and cracker crumbs; form into 36 meatballs. Dip meatballs in eggs (slightly beaten with water); roll in flour. Fry in salad oil, browning all sides. Remove from an. Stir pineapple juice and apricot jam into drippings; add vinegar and soy sauce. Simmer until thickened. Add meatballs and stir to coat with sauce. Arrange meatballs and pineapple in baking dish; cover with sauce.
Bake at 250º degrees for 1 hour. Yield: 36 meatballs.
