3/4 C. shortening
1 C brown sugar (packed)
1/2 C. sugar
1 egg
1/4 C water
1 tsp. vanilla
1 C flour
1/2 tsp. baking soda
1 tsp. salt (optional)
3 C 1 Minute Oats
1/2 C raisins (if desired)

Directions:
Directions:
Preheat oven to 350ºF. Combine moist ingredients. Stir in dry
ingredients. Add the oats and mix well. Drop by spoonfuls onto
cookie sheet that has been lightly sprayed with cooking spray.
Cook 6-8 minutes until brown. Cool for a couple of minutes and
remove from cookie sheet.

Optional ingredients might be 1/2 C dates, 1/2 C
nuts of your choice (I have even added chocolate chips.) For
a holiday flare spices like cinnamon, ginger, nutmeg, etc. can
be added by the 1/2 tsp. or tsp. full. Whole oats can be
substituted for the 1-minutes oats. Whole oats will give the
cookie a different texture. I never add the salt. This is a great
recipe to experiment with. Enjoy!
