4 tbsp butter or olive oil, divided
8 sea scallops, rinsed and patted dry
2 cloves garlic, minced
8 oz fresh spinach
½ lemon, the juice
Salt and pepper, to taste

Directions:
Directions:
Heat 2 tbsp butter or olive oil in a large skillet over medium-high heat.
Season scallops with salt and pepper on both sides. Add to the hot skillet. Cook about 2 minutes on each side until you get a nice golden brown sear. When done, remove to a plate.
In the same skillet, add the remaining butter or oil. Add the minced garlic and saute a minute until fragrant.
Add the spinach and cook until wilted. Season with salt and pepper. Add Scallops to the skillet to heat.
Squeeze fresh lemon juice over the top and serve immediately.
