2 C flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp black pepper
1 tsp cinnamon
1 tsp coriander
1/2 tsp cardamom
1/4 tsp clove
4 Tbs butter, cold, sliced into 1/8 inch pieces
1/2 C crystallized ginger, chopped
3/4 C heavy cream
1/4 C dark brown sugar

Topping:
1 egg beaten
Coarse sparkling sugar

Preheat oven to 425º

In medium bowl, whisk together flour, baking powder, baking soda, salt, and ground dry spices. Add cold butter, tossing to coat with dry ingredients. Press butter pieces between your thumbs and forefingers into small flat pieces. Add ginger and toss to combine.

In small bowl whisk together cream and brown sugar. Add wet ingredients to dry ingredients and mix gently until mixture just combined.


Transfer to lightly floured work surface and fold a few times to incorporate any dry bits if necessary. Pat dough into a 7 inch circle. Cut the dough into eight wedges. Arrange evenly on prepared pan. Brush with egg wash and garnish with coarse
sugar.

Bake 18-22 minutes on the top rack until they're light gold and firm to the touch.
