4 C self-rising flour
2 Tbs baking powder
1 tsp baking soda
3 sticks butter, chilled and grated
2 eggs, beaten
1 1/2 C buttermilk

To brush tops:
1 egg
1 Tbs buttermilk

Directions:
Directions:
Preheat oven to 400º

In large bowl, whisk together flour, baking powder, and baking soda. Add butter and use pastry blender to cut butter into flour mixture until the size of peas. Stir in eggs and buttermilk. If too dry, add additional buttermilk one tablespoon at a time. Cover and refrigerate 30 minutes or overnight.

Scrape dough onto floured board. Press into 14 inch round 1/2 inch thick. Use 2 3/4 inch biscuit cutter, cut into 20 biscuits. Transfer to baking sheet so that they are touching.

In small bowl, beat egg and buttermilk and brush mixture on top of biscuits.

Bake 15-20 minutes or until golden brown. Serve warm.
