½ cup basmati rice
1 cup split mung dal
1½ tbsp ghee or coconut oil
1 cup chopped yellow onion
3 chopped garlic cloves
2 cups chopped vegetables (carrots, chard, and broccoli are great)
5 cups water

2 tsp cumin seeds
2 tsp yellow mustard seeds
1tsp coriander powder
1tsp turmeric powder
1-2 inches fresh chopped ginger
salt to taste

optional garnish of plain yogurt
optional garnish of chopped cilantro

Directions:
Directions:
1. (Optional) Soak rice and dal ~3 hours or overnight and discard water. This helps make dal more digestible.

2. Heat a medium pot or sauce pan on medium heat with oil. Add Cumin seeds, mustard seeds, and ginger. Stir occasionally and cook until mustard seeds start to pop or 2 minutes.

3. Add onions and garlic and continue cooking for 4 minutes, stirring occasionally.

4. Add the rest of the spices and stir them into the oil and onion mixture.

5. Add the other vegetables, dal, and rice, and mix to coat them all in the spice mixture.

6. Add the water and a pinch of salt and bring it to a boil, then reduce the heat and simmer for about half an hour. Stir occasionally.

7. Once the mixture has the texture of porridge, add salt to taste and optionally garnish with a drizzle of yogurt and chopped cilantro.

This is my personal take on a classic Ayurvedic recipe. Kitchari is considered an easily digestible and well-rounded meal in Ayurveda, though it can also be served as a side dish.
