4 thin pork chops
salt and pepper
1 TBS milk
2 large eggs, beaten
½ cup plus 2 TBS flour
⅔ cup Italian panko
3 TBS olive oil
6 TBS butter
1 TBS capers
⅔ cup white wine
⅓ cup chicken broth
1 lemon

Directions:
Directions:
1. Mix flour, salt and pepper. Mix milk and eggs
2. Dredge chops in flour, then egg mixture, then panko
3. Put oil and 3 TBS of butter in skillet. Brown chops 2-2½ minutes. Remove
4. Add capers to skillet with rest of butter
5. Add rest of flour and cook 30 seconds
6. Add wine and broth; cook about 2 minutes
7. Drizzle sauce over chops
