Ingredients: 2 tbs oil 3 boneless skinless chicken breasts, cut into large cubes 2 small stalks of celery, chopped 3 scallions, chopped in 1-inch pieces 1/4 c. soy sauce 1/4 c. butter 1/4 c. lemon juice 8 oz. package of yellow rice

Directions:Cook yellow rice, following package directions.
Add oil to wok or skillet, swirl to coat pan and heat to med-high. Add chicken, celery and scallions and cook until chicken is almost cooked through. Add butter and cook a moment more - until chicken is done. Remove from heat and add soy sauce and lemon. Mix.
Serve immediately over yellow rice. |

Notes: Note from my mom: We made this almost weekly as Walt and Jeanie were growing up. It was easy to prepare the ingredients ahead of time and throw it all together before (or after) a ballgame. Just remember to start the rice first as it takes longer to cook than the chicken, if you have done your prep work earlier in the day.
My note: for some reason we had different plates that we always used for wok chicken and chinese food takeout. I still have the plates and use them in the same way.
