Ingredients: One 5 - ounces chicken breast 1 ounce Fajita seasoning store bought or homemade Vegetable oil saute 1/2 tomato cut in slices or wedges 4 ounces onion sliced thin 2 ounces Yellow and Red Peppers deseeded and cut into strips Salt and freshly ground pepper to taste 1/4 cup sour cream to serve 1/4 cup Pico de Gallo or salsa store bought or homemade to serve 1/2 cup cheddar cheese to serve 4; flour tortillas to serve Fresh jalapenos to serve

Directions:1. Place chicken breast in a shallow dish. 2. Sprinkle with 1/2 fajita seasoning Rub in. Turn and sprinkle second side with the remaining seasoning Rub in. 3. Cover and place in the refrigerator for at least 1 hour and up to a day or until ready to cook. 4.Place marinated chicken on a clean lightly oiled broiler 5. Cook chicken until done. Make sure it reaches minimum internal temperature of 160 F 6. Remove from oven to a cutting board board. 7. Slice chicken into 32 to 40 thin pieces. Set aside and keep hot. 8. Place tomato, onion, and peppers in a large saucepan with a little oil. 9 Place over medium heat and saute until tender and fragrant. 10 Add salt and pepper to taste. 11. Remove to a serving bowl and keep hot. 12. Place tortillas in the microwave for 15 seconds. 13. Place Pico de gallo or salsa, sour cream, cheddar cheese,and fresh jalapenos in a small serving bowl. 14. Serve by placing all ingredients on table or serving board to allow everyone to prepare their own tortillas.
Fajita Seasoning 2 teaspoons chili powder 1 teaspoon paprika 1/2 teaspoon ground cumin 1/2 teaspoon garlic powder 1/2 teaspoon onion powder 1 teaspoon dried oregano 1 teaspoon salt 1 teaspoon sugar 1/4 teaspoon cayenne pepper
Instructions In a small bowl combine together the ingredients. Use as needed about 2 tablespoons per recipe |
