2 Tbsp olive oil
1 chicken, cut up
salt and pepper
1 onion, chopped
4 garlic cloves, minced
1/2 cup Sofrito
2 potatoes, peeled and cubed
2 cups chicken broth
8 oz tomato sauce
2 2/3 Tbsp Sazon
1/2 tsp ground cumin
1 bay leaf
2 Tbsp cold water
1 Tbsp cornstarch

Directions:
Directions:
Heat the oil in a large pot over medium-high heat.
Season the chicken with salt and pepper, then brown in the hot oil for 6 - 7 minutes per side.
Remove to a bowl and cover.
Reduce heat to medium, add the onion, and cook until the onion is translucent.
Add the garlic and cook for 1 minute, then stir in the Sofrito and coo for 2 - 3 minutes more.
Add the potatoes, broth, tomato sauce, Sazon, cumin, and bay leaf, then bring to a boil.
Return the chicken to the pot, cover, and cook for 1 hour.
Remove the chicken to a bowl and cover.
Combine the water and cornstarch until smooth, then stir into the soup until thickened.
Return the chicken to the pot and cook 10 minutes more.
