1/4 cup unsalted butter
1 leek, white and light green parts only
5 cups fish stock or water
1 lb potatoes, cubed
1 carrot, sliced
1 lb salmon fillet, skinned and cut into small chunks
1 cup heavy cream
1 cup fresh dill, finely chopped
salt and pepper

Directions:
Directions:
Melt the butter in a pot, then add the sliced leeks and sauté until translucent, about 7 minutes.
Add the stock, carrot, and potatoes, then bring to a boil.
Reduce to medium heat and cook for 10 minutes.
Add the salmon and cream, then cook for 5 - 7 minutes, until it starts to boil.
Turn off heat and add the dill, salt, and pepper.
Cover and let sit for 10 minutes.
