6 Tbsp unsalted butter
1/3 cup flour
2 1/2 cups milk
2 1/2 cups heavy cream
12 oz white cheddar, grated
8 oz ham, chopped
3 oz crumbled blue cheese
1/2 cup chopped sun dried tomatoes
1/2 cup caramelized onions
1/3 cup thinly sliced green onions
4 slices bacon, crumbled
kosher salt and pepper
Tabasco sauce
nutmeg
1 lb cavattapi pasta, cooked al dente
1/2 cup panko

Directions:
Directions:
Heat the butter in a 6-quart saucepan over medium-high heat.
Stir in the flour until smooth, about 2 minutes.
Add the milk and cream, then simmer until thickened, about 2 minutes.
Remove from heat and stir in 3/4s of the cheddar, the ham, blue cheese, tomatoes, onions, green onions and bacon.
Season with salt and pepper, then stir in the Tabasco sauce, and nutmeg.
Fold in the pasta, then transfer to a greased 9x13-inch baking dish and sprinkle with the remaining cheddar.
Top with the bread crumbs and bake at 350º until golden, about 25 minutes.
