8 oz elbow macaroni
3 Tbsp unsalted butter
1/4 cup flour
3 cups milk
1 3/4 cups goat cheese
2 cups baby spinach
kosher salt and pepper
4 plum tomatoes, sliced thin

Directions:
Directions:
Add the macaroni to lightly salted boiling water and cook, stirring occasionally, for about 3 minutes; drain.
Melt the butter in a 4-quart saucepan, then add the flour and stir until thickened, about 1 minute.
Whisk in the milk and cook, stirring often, until the sauce has thickened and coats the back of a spoon, about 10 minutes.
Remove from heat and stir in 1 1/2 cups goat cheese and the spinach.
Mix in the pasta and season with salt and pepper.
Transfer into a greased 8x8-inch baking dish, layer the tomato slices over the top, and sprinkle with the remaining goat cheese.
Bake at 375º for 45 minutes.
Cool for 10 minutes before serving.
