2 Tbsp olive oil
1 onion, chopped
2 carrots, sliced
2 garlic cloves, minced
1/2 tsp kosher salt
1/4 tsp pepper
6 cups chicken broth
16 oz frozen cheese tortellini
4 cups chopped dandelion greens, tough stems discarded
1/4 cup fresh basil
1/4 cup grated parmesan cheese

Directions:
Directions:
Heat the oil in a saucepan over medium-heat.
Add the onions, carrots, garlic, salt, and pepper, and cook until crisp tender, about 5 minutes.
Add the broth and greens, then bring to a boil.
Add the tortellini and cook until it is al dente and the greens are tender, 5 - 7 minutes.
Stir in the parmesan and basil.
