10 slices thick cut bacon, chopped
1 medium head cabbage, cored and cut into 8 wedges
2 carrots, sliced
1 large yellow onion, sliced thin
1/4 cup apple cider vinegar
kosher salt and pepper
2 Tbsp unsalted butter
coarsely chopped toasted pecans
finely chopped chives
grainy mustard

Position a rack in the center of the oven and preheat to 350º.
Fry the bacon until deep golden and crisp, then set the bacon aside and discard all but 2 Tbsp of the grease.
Arrange the cabbage, cut side down, in a 9x13-inch baking dish and drizzle with the bacon grease..
Scatter with the onion, carrots, and bacon, then pour over the vinegar and 1/4 cup water.
Season with salt and pepper and dot with the butter.
Cover tightly with foil and bake for 1 hour, then flip the cabbage and cook for 1 hour more, until the cabbage is very soft.
Increase temperature to 425º, uncover the pan, and bake until the vegetables are brown around the edges, about 18 minutes.
Sprinkle with the pecans and chives, then serve warm with mustard on the side.
