5 large bunches scallions
2 Tbsp butter
1 Tbsp olive oil
1 russet potato, peeled and sliced thin
6 cups chicken stock
salt and pepper
1/2 cup heavy cream

Directions:
Directions:
Trim and thinly slice the scallions, then set aside 1/2 cup for garnishing.
Melt the butter with the oil in a medium heavy bottomed pot over medium-low heat.
Add the scallions and cook, stirring often, until soft, about 20 minutes.
Add the potatoes and chicken stock, then bring to a boil over medium-high heat.
Reduce to medium-low and simmer until the potatoes begin to disintegrate, 35 - 40 minutes.
Season with salt and pepper and allow soup to cool slightly.
Puree until smooth, then thoroughly mix in the cream and adjust the seasoning.
Serve hot garnished with the reserved scallions.
