1/4 cup oil
2 medium yellow onions, chopped
1 1/2 lb trimmed beef chuck, chunked
kosher salt and pepper
1/4 cups Hungarian sweet paprika
2 tsp caraway seeds
2 tsp marjoram
2 cloves garlic, minced
2 medium carrots, chunked
2 medium parsnips, chunked
1 1/2 lb medium new potatoes, peeled and chunked
1 medium tomato, chopped

Directions:
Directions:
Place the oil and onions in a large Dutch oven over medium heat and cook, stirring occasionally, until the onions are soft and translucent.
Increase to high heat, add the beef, and season with salt and pepper.
Cook, stirring frequently, until the meat is browned, then stir in the paprika, caraway, marjoram, and garlic.
Cook until fragrant, then add the carrots, parsnips, and 5 cups of water.
When it reaches a boil, reduce heat to medium-low, cover, and cook until the beef is nearly tender, 45 - 50 minutes.
Add the potatoes and continue to cook, uncovered, until the potatoes are fork tender, about 25 minutes.
Add the tomato and cook 10 minutes more.
